During these long, cold winter months we find ourselves, more often than not, reaching for comfort food to warm our souls. These comfort foods tend to not be the healthiest choices. My go-to for a hot, healthy dinner to warm me up in the winter is a chicken and veggie dish. Try this simple recipe, and feel free to make any modifications. For example, instead of rice, substitute a side of quinoa, or use boneless chicken breasts and as much salt as you like - or no salt at all
Roasted Bone-In Chicken Breasts with Vegetables – The Cookie Writer
Serves: 2-4 servings
· 2 lbs bone-in, skinless chicken breasts
· 1 tsp. garlic powder
· 2 tsp. dried basil
· Salt and pepper
· ¼ tsp. cayenne powder
· ¼ cup olive oil
· Assorted mixed veggies (I bought veggie packs from my local grocery store.)
1. Preheat oven to 400F. Line a baking sheet with parchment paper or silicone mat.
2. Rub some olive oil onto chicken breasts and season with salt and pepper. Toss veggies in remaining oil and season with salt and pepper. Place chicken onto pan and arrange veggies around chicken. Sprinkle entire pan with garlic powder, basil, and cayenne. Place into oven and bake for 30-40 minutes, or until chicken reaches 160F (depends on the thickness of your chicken breasts.)
3. Serve along with rice.
